Banana-Nut Muffins

1 Cup Sugar 2 Cups Flour
1/3 Cup Shortening 1 Teaspoon Baking Soda
2 Eggs 1/4 Teaspoon Salt
1 Cup Banana, Mashed 1/2 Cup Walnuts, Chopped
1 Teaspoon Vanilla Chocolate Chips, Optional

Cream sugar with shortening; beat in eggs. Add banana and vanilla. Mix well, then add dry ingredients and nuts, stirring just until blended. Add some chocolate chips if desired. Bake in paper lined muffin cups at 350 degrees for about 20 minutes. Makes 16 muffins.
