"When my Grandma passed away, her sisters, Lois and Mary, came down from Utah for the memorial service.  Aunt Lois shared a few recipes with me, including this one.  This is an original recipe from one of her sons who ran a diner at a truck stop.  It is one of my favorite recipes, and a favorite of my good friend, Joyce.  It has become known as "THE Chicken" because of how much she enjoys this dish." - April Ferre
