Chocolate Coconut Clusters

1 8-Oz Package Semi-Sweet Baking Chocolate 1 1/3 Cup Flaked Coconut

Toast coconut. Melt chocolate in saucepan over very low heat, stirring constantly. Add coconut and mix lightly until completely coated. Drop teaspoonfuls of mixture onto waxed paper. Chill until chocolate is firm. Makes 2 dozen.

To prepare in microwave oven, place unwrapped chocolate in non-metal pie plate. Heat in microwave oven at medium power for 2 minutes. Stir and heat 30 seconds longer. Proceed as directed.

Other chocolate baking chips may be substituted. If using white chocolate, add a bit of paraffin wax.

2001 Recipe - April Ferre - From Baker's Book of Chocolate Recipes, 1988.

"This is one of my best friend, Patricia's, favorites that I make during Christmastime.  It's quick and easy, just be careful not to burn the coconut." - April Ferre
