6 Tablespoons Olive Oil | 1 Pint Cherry Tomatoes |
2 Tablespoons Lemon Juice | 1 Cucumber, Peeled and Cubed |
1/2 Teaspoon Garlic, Chopped | 1/2 Red Onion, Sliced |
1 Teaspoon Red Wine Vinegar | 1 Green Pepper, Diced |
1/2 Teaspoon Dried Oregano | 1/2 Cup Kalamata Olives, Halved |
Salt and Pepper, To Taste | 1/2 Cup Feta Cheese, Crumbled |
Combine first five ingredients and whisk together until blended. Season with salt and pepper to taste. Combine remaining ingredients in bowl. Toss with dressing and serve.
