Helen's Divinity

2 Cups Sugar 2 Egg Whites, Beaten
2/3 Cup Light Corn Syrup 1 Teaspoon Vanilla
1/3 Cup Water, Hot

Cook sugar, corn syrup and water to hard ball stage. Pour mixture over beaten egg whites, slowly, beating while adding. As mixture thickens, you may add faster. Add vanilla and beat until mixture looses gloss and does not sink.

Recipe - Helen Ferre

"One of my Dad's favorites that his Mom would make while he was growing up.  I tried to make these one rainy afternoon.  I didn't realize that divinity was so sensitive to temperature and humidity.  I ended up with a sticky, googy blob of sugary mess!  So only try to make this on clear, dry days." - April Ferre
