Summer Corn Chowder

8 Ears Yellow Corn 1 Pound Yukon Gold Potatoes, Cut in 1/2 Inch Pieces
-- Or 4 Cans Corn 1/2 Teaspoon Dried Thyme
3 Tablespoons Butter 1 Bay Leaf
6 Slices Bacon, Chopped Salt and Pepper, To Taste
1 Onion, Chopped 1 Cup Heavy Cream
1/4 Cup Flour 1 Tablespoon Honey
1 Clove Garlic, Minced 2 to 3 Tablespoons Green Onion, Chopped
5 Cups Chicken Stock Shredded Cheddar Cheese, For Serving (Optional)

Cook bacon in a Dutch oven until crispy. Remove to bowl. Add butter and onions to bacon drippings and cook until onion has softened and just stated to brown around the edges. Add the flour and garlic and cook 1 1/2 minutes. While whisking, slowly pour in chicken stock.

Bring mixture to a boil, stirring constantly, and add corn, bacon and potatoes. Add in thyme and bay leaf and season with salt and pepper to taste. Reduce heat and simmer, stirring occasionally, until potatoes are tender, about 20 minutes.

Remove bay leaf and transfer 1/3 to 1/2 of the mixture to a blender and blend until smooth. Stir the mixture back into the pot and add heavy cream and honey.

To serve, sprinkle with green onion and shredded cheddar cheese, if desired.

"At first, I wasn't impressed with this recipe.  I thought it was neither here nor there.  It made a full Dutch oven and I had a feeling I'd end up throwing half of it out.  But then a week later I found myself still coming home every day and looking forward to heating a bowl of this up.  Adding fresh green onions is a must because the soup needs a bit of brightness.  It is fantastic served with a good sourdough bread and butter, much like if it were clam chowder." - April Ferre
