Town And Country Hotel Cheesecake

8 Ounces Cream Cheese, Room Temperature 1 Egg
1/3 Cup Sugar 1 8-Inch Graham Cracker Crust
Vanilla Or Lemon Flavor 1/2 Cup Sour Cream
Dash Salt 1 Tablespoon Sugar

Cream together cream cheese, 1/3 cup sugar, flavoring, and salt. Add egg, beat well. Pour into graham cracker crust. Mix together sour cream, 1 Tablespoon sugar, and a few drops flavoring. Pour over cheesecake. Bake at 350 degrees for 8 minutes.

"I found this recipe among my Grandma's handwritten recipe cards. On the back of the card was printed 'You have just been served the 7455th piece of Cheese Cake in the Gourmet Room at Town and Country Hotel.  I used 1/2 Teaspoon Lemon Extract and 1/2 Teaspoon Vanilla in the cake batter, and 1/4 Teaspoon Lemon Extract with the Sour Cream topping.  It gave the cheesecake a light, fresh citrus flavor.'" - April Ferre
