4 2 1/2-Pound Chickens | 1 Clove Garlic, Crushed |
1/3 To 1/2 Cup Soy Sauce | 1/2 Teaspoon Dry Ginger, |
1/2 Cup Catsup | -(Or 1-inch Fresh Ginger Root) |
1/4 Cup Salad Oil | 1/2 Teaspoon Salt |
1/4 Cup Lemon Juice | Fresh Ground Pepper |
1/2 Cup Pineapple Juice |
Brush chicken all over with soy sauce and let stand at least 30 minutes. Mix catsup with remaining ingredients. Brush catsup sauce on chickens and broil slowly. Turn and baste frequently until well browned and tender, about 1 hour.
