Spinach, Cranberry and Goat Cheese Salad

Baby Spinach Sliced Red Onion
Dried Cranberries Diced Pears, Optional
Goat Cheese Raspberry Poppy Seed Dressing
Candied Walnuts

Combine spinach, cranberries, goat cheese, candied walnuts, red onion, and pears. Serve with Raspberry Poppy Seed Dressing. Alternatively, use mixed greens instead of baby spinach.

2020 Recipe - April Ferre - based the salad from Nugget Markets.


"One of the local grocery stores, Nugget Market, has a very nice prepared food section.  One Easter we tried their Spinach, Cranberry and Goat Cheese Salad and I fell in love with it. Back in 2009 my Mom came up with her version of the accompanying Raspberry Poppy Seed Dressing.  A decade later I realize that I should include the salad portion in our cookbook as well.  In looking at other recipes online, I saw that some people also add pear to similar salads and it is a great optional addition." - April Ferre
